This Japan-inspired chocolate collection is a brainchild of Kevin Lühmann and Mark Schimmel, the award-winning chocolatier from the Netherlands, who is bringing Kevin's concepts to life by doing magic with KRAK chocolate.
1. KRAK 40% White Chocolate with Houjicha - Roasted Green Tea
Hojicha is a traditional Japanese green tea that undergoes a special roasting process. The tea leaves are roasted at a high temperature, which imparts a distinct reddish-brown color to the leaves and creates a unique flavor profile. The roasting process reduces the tea's caffeine content and gives it a toasty, caramelized taste with notes of malt and a comforting aroma.

2. KRAK 55% Colombia with Kinako (Roasted Soybean Powder)
Kinako chocolate is a unique Japanese-style treat, featuring roasted soybean powder, a product commonly used in Japanese cuisine.
Paired with a pure cocoa taste that lingers, this dark chocolate with 55% cocoa content offers taste notes of nuts and caramel.
3. KRAK Vietnam 70% with Yuzu and Shichimi spices
Kevin says: "Shichimi, meaning "seven spices," is a popular Japanese blend. Chili is always included, but the rest vary. I once had a dessert with Mikan Shichimi (mandarin) and loved it. I myself am obsessed with Yuzu, and the way spice flavors unfold in chocolate is a mouth-watering rollercoaster! The cocoa butter melts, and you first taste the spices, and then as you chew, more sour notes from Yuzu and the chocolate will pop up.
He asked Mark Schimmel from KRAK to find the right beans and craft the chocolate for this bar. He came up with the Vietnam origin that takes the flavor journey even deeper.
