Kevin Lühmann is an award-winning chocolatier from Germany who creates Japan-inspired chocolate.
Kevin says: "Shichimi, meaning "seven spices," is a popular Japanese blend. Chili is always included, but the rest vary. I once had a dessert with Mikan Shichimi (mandarin) and loved it. I myself am obsessed with Yuzu, and the way spice flavors unfold in chocolate is a mouth-watering rollercoaster! The cocoa butter melts, and you first taste the spices, and then as you chew, more sour notes from Yuzu and the chocolate will pop up.
I asked Mark Schimmel from Krak to find the right beans and craft the chocolate for this bar. He came up with the Vietnam origin that takes the flavor journey even deeper. Enjoy!"
